Does paying part of an Israeli debt reset the statute of limitations?

Yes. Under Section 16 of the Limitation Law 5718-1958, any partial payment on an Israeli debt restarts the full 7-year limitation period from the payment date, regardless of how small the payment is or whether the debtor claims it was made under protest.

Section 15 similarly provides that any written acknowledgment of the debt by the debtor — including a WhatsApp message or email — resets the clock from the date of acknowledgment.
