Can I get an interim order to protect assets during divorce proceedings?

Yes. Either spouse can apply for an interim injunction (tzav atzira) to prevent the other spouse from disposing of, transferring, or encumbering assets during divorce proceedings. Courts grant these relatively readily where there is a genuine concern about asset dissipation.
